Roux started with something simple: Alissa loves mac & cheese. It was her go-to comfort food, always evolving, always worth making at home.
That love sparked an idea—what if we built something around it?
Enter Dan McKelvey, restaurateur and entrepreneur behind Central New York’s Whacko Gringo, known for putting creative spins on familiar favorites.
Together, Alissa’s inspiration and Dan’s experience became Roux—a modern mac & cheese concept focused on elevated comfort food, quality ingredients, and bold flavors.
From classic mac to filet mignon, buffalo chicken, pesto, truffle, and more, everything we serve is a fresh take on a familiar favorite.
And because we’re mobile, we’re bringing it directly to you—appearing at festivals, farmers markets, community events, private parties, and wherever great food is needed next.
At its core, Roux is simple:
